Eight markers.Seven still empty.
We could write plausible numbers today and nobody would check. That is precisely the practice this house exists to refuse.
01 / The scale
What a buyer can actually check.
Six of these exist everywhere and are never gathered in one place. Two belong to this house alone.

That it is Ziziphus, and not a blend. Pollen analysis.
awaiting labThat no sugar was added. The test that exposes the most common fraud.
awaiting labThat the honey was never heated. A high HMF betrays pasteurisation.
awaiting labThat the enzymes are alive, so the honey is raw.
awaiting labThat it will not ferment. The first complaint sidr buyers make.
awaiting labThe real antibacterial activity. Measured by serious producers, never published.
awaiting labThat the harvest fits inside the twenty-six days declared. No one else states it.
measuredThat the honey is raw. The only proof you obtain at home, without believing us.
verify at homeNo threshold is published here, and that is deliberate. The markers are measurable, but the reference values must be validated by a laboratory before they are written down. Publishing a wrong threshold would destroy the position in a single dispute.
02 / The lot sheet
The scale, applied to one real jar.
One sheet per lot, open to anyone, with the figures as they came back. Including the ones that do not flatter us.

The 2026 harvest was deliberately small: enough for tests, laboratories and presentation, not for sale. The first commercial harvest is May and June 2027.
03 / What this is not
Measurement is not a health claim.
Three registers, kept apart on purpose.
Measured
A laboratory figure, with its unit, its date and its method. Publishable whether or not it flatters us.
Documented
Origin, window, method. Verifiable by inspection, not by analysis.
Not said here
What honey does to a body. That is a question for a qualified professional, and nothing on this site answers it.

We are drawn to what stands on its own,
comes from somewhere real,
and leaves
something behind worth keeping.
